Rolled fondant icing also called plastic icing, is like sugar play dough. We knead it, roll it out in sheets and draped over the cake and then smoothed down over a thin layer of butter cream or chocolate ganache. Fondant offer a range of design options for wedding and special occasion cakes, it gives matte finish and can be draped, painted on and tinted among other things. Most of the cakes you see in wedding magazines are covered in fondant.
Royal Icing - is a mixture of egg white and icing sugar. It can be spread over the cakes and sets hard. Also used for piping.
Marzipan - a mixture of sugar and ground almonds, marzipan can be used as a filling, undercoat or icing and also to create hand-moulded decorations.
Ganache - nuggets of rich chocolate are combined with heavy cream, then poured over your cake to create flawless satin finish or used as a filling.
